The die is a porous material saturated with ink, so the raised areas release it as they meet the paper. That gives a sharper and more even impression than a self-inking stamp, and many times more impressions before it needs refilling.
It costs more, and it is fussier about changing ink colour, because the colour is in the die rather than in a pad you can swap. For fine detail or a logo it is the better object; on a PAID stamp nobody will ever notice the difference.
