Will it keep counting next year?
It counts continuously. If you want a yearly reset, that is a decision worth making before you start, because changing it later leaves an ambiguous stretch where two numbers look the same.
What if a stamped invoice is voided?
The number is spent. Gaps in a sequence are visible and that is the point: a missing number tells you to go and find out what happened to it.
