A delivery note is a record of when something arrived and who accepted it, and the stamp is doing the entire job. Nobody reads the wording; they read the date. Which is why the failure that matters here is not a missing stamp, it is a stamp with yesterday on it, because whoever was turning the date bands on the physical stamp forgot that morning.

Questions
What should a delivery note stamp say?
RECEIVED, the company name, and a date. Add a time where deliveries arrive through the day, and a line for a signature or initials where a named person has to accept. Some operations add a second mark, RECEIVED SUBJECT TO INSPECTION, which is worth the extra stamp: signing for a sealed pallet is not the same as agreeing the contents are correct.
Does the date fill itself in?
Yes, and it is the reason to do this here rather than with a rubber stamp. The date resolves at the moment the stamp is applied, so a note stamped this afternoon says this afternoon. A self-inking date stamp has bands somebody has to turn every morning, and the morning nobody does it is the morning a hundred documents get stamped with yesterday.
Can I stamp a photograph of a delivery note?
Yes. Drivers photograph these more often than they scan them. Drop the image or the PDF in and the stamp is drawn onto the page. A photograph taken at an angle stamps fine; it just looks like what it is, so square it up first if the note is going into a file somebody will audit.
Can I do a whole day of them at once?
Yes, through batch stamping: the same RECEIVED mark on every file in the run, each taking its own date and its own serial number. Past about twenty notes it is faster than doing them one at a time.
Is a stamped delivery note proof of delivery?
It is evidence of it rather than proof, and how much weight it carries depends on what your contract with the supplier says about acceptance. The mark records that a document was received on a date at your premises. Whether that amounts to accepting the goods is a question for the terms, not for the stamp.
