What goes on a wedding stamp?

Usually two sets of initials or a monogram, the date, and sometimes a surname or a short phrase. Less text reads better on stationery than more.

Can I set a future date on the stamp?

Yes. The date field takes any date you type, not only today’s, which is what an invitation needs.

What size should a wedding monogram stamp be?

Smaller than a business stamp. A monogram works at half the size of a company seal, and on an envelope flap that is usually what you want.
